Why does "é" become more than one hex pair?
Text is encoded as UTF-8, not ASCII or Latin-1. "é" is the two bytes c3 a9, so it becomes two hex digits per byte, four in all; an emoji such as "😀" is four bytes and never two surrogate halves.
What are the prefix and Group size controls for?
They shape the output for pasting into code: Group size decides where the Delimiter falls, and the prefix toggle writes a marker like "0x48" before each Group. None of this affects the bytes themselves.
Why does a byte like 10 keep a leading zero in hex?
Every byte is always written to its full Digit width — two digits for hex, eight for binary — so "0a" never shortens to "a" and "00001010" never shortens to "1010".
